Monarch Pastry Flour

With slightly more protein and a bit higher ash content than its hi-ratio counterpart, Monarch Pastry Flour is a soft, bleached, supple cake flour.  It is best-suited for donuts, low-sugar-ratio cakes, muffins and pastries.
