High-Gluten Flours
High absorption, strength and structural integrity are the hallmarks of our high-gluten flours.  All of our higher-gluten varieties offer high mixing tolerance, excellent absorption properties and outstanding elasticity. Use these high-protein selections as the perfect medium for bagels; pizza crust; and hearty, chewy rolls and breads.  Or mix them with other flours to lend some strength to whole grain and multi-grain loaves.

Other Spring Wheat Flours
Our medium- to lower-protein spring wheat flours provide exceptional strength and mixing tolerance for products that don’t require a high level of absorption.  Their versatility and reliable performance make them ideal for slightly softer applications such as pan breads, hard and soft dinner rlls, pizza crust, croissants and hoagies.

Hard Wheat Flours
The staples of bread-baking, our hard wheat flours work for a wide range of bread applications. From finely milled, low-ash varieties for soft, bright-white crumb color; to high-ash, whole grain options that produce hearty, robust finished product characteristics.
