Clinton acid modified corn starches are prepared by treating an aqueous suspension of unmodified starch with a small quantity of strong acid (e.g. hydrochloric acid). The degree of depolymerization that occurs depends on the reaction time. When in-process laboratory control indicates the proper viscosity has been reached, a mild alkali is introduced to neutralize the acid and stop hydrolysis.
