EDIGEL® 100 wheat starch is an unmodified food grade wheat starch, possessing the unique character of wheat starches. EDIGEL® 100 wheat starch is tan in color, gelatinizes at low cooking temperatures of 52° to 63° C. It has a lower viscosity than other wheat starches and viscosity is more stable to shear at high temperatures. Being low in buffering capacity, Edigel 100 responds readily to the addition of acid or alkali and the pH of the mixture can be easily adjusted to any desired level. Filler binder, sausage extrusion, and pelletized foods.
