Performance and Flavor Enhancers
ADM citric acid and citrates adjust pH levels while adding the tart citrus note that gives many popular beverages their signature. For when pH control is needed without citrus tartness, we offer lactic acid as well. Many flavors and colors function best at a specific pH level, so we can help you use acidulant systems such as citric acid/sodium citrate or lactic acid/sodium lactate to achieve the precise pH best for your beverages.
Fructose is known mostly for its clean taste and microbial stability, but it also can enhance fruit flavors so well that you can often reduce flavor usage. ADM ingredients can also help control your beverage’s look as well as its taste. Some soy proteins can be used as clouding agents in neutral beverage systems, while emulsifiers can be used to increase the whiteness of some beverages by tightening the overall emulsion.
